Chocolate Caramel Day
The 19th March is Chocolate Caramel Day. What a great way to spend your day, devoting it to chocolate caramel! Whether you just fancy grabbing a pack of Rolos to celebrate the day or taking the time to do some baking, there’s a whole range of goodies you can indulge in. Swirl some over fruit, muesli & yogurt for a sweet start to the day or treat yourself to a chocolate & caramel milkshake mid morning. To get you started, here’s a recipe for Millionaires Shortbread:
Millionaires Shortbread
Ingredients
Shortbread: Caramel:
8oz plain flour 4oz butter 6oz milk or dark chocolate
5oz butter 2 tblsp. golden syrup
1oz ground rice 1 small tin condensed milk
3oz castor sugar
To save time, you could use a tin of Nestle Caramel or a jar of Dulce du Leche but it doesn’t set as well as the homemade version & tends to ooze out when cut.
Method
Preheat the oven to 180C.
To make the shortbread, rub the butter into the dry ingredients until it resembles breadcrumbs. This can be done by hand, in a food mixer or food processor.
Spread onto a greased baking tray & press down. Bake for 35 minutes until golden. Leave to cool.
For the caramel, melt the butter, syrup & milk in a saucepan. Bring to the boil & boil for 7 minutes, stirring all the time. It will turn a lovely caramel colour but take care it doesn’t catch on the bottom of the saucepan.
Pour over the cooled shortbread, smooth & leave to cool.
Melt the chocolate in a bowl over a saucepan of hot water or in a microwave. Pour over the caramel & smooth. Mark into squares & cut when completely cold & set.
For a more decorative finish, melt 2oz of white chocolate. Once the other chocolate has been spread over the caramel, add blobs of the white chocolate & swirl together.
